  • Whole potato
  • Fish (white)
  • Whole tomatoe
  • Lemon
  • Fresh parsley
  • 1tbs Spanish paprika
  • 1tbs coriander & cumin
  • Salt & pepper to season
  • 1 tbs olive oil

    Method

    • step 1

      Slice the potato into half inch slices and gently fry them in olive oil.
    • step 2

      mix the spices, parsley and olive oil to make a paste and flavor the fish. Then rest the fish on the potatoes.
    • step 3

      Slice the tomato and lemon to the same size and stack on the fish.
    • step 4

      Add water just to cover ad chuck in the rest of the spice and parsley mix and cook until the fish is flaked. Serve with cous cous!
