- 2 eggs at room temperature
- 250g plain flour, sifted
- 300ml lukewarm milk
- 15g sugar
- 5g salt
- 60 g melted butter
- 15ml oil
- 15g fresh yeast or 5g dried yeast
Method

Melt the butter in the microwave.step 2
Warm the milk very lightly not to kill the yeast (20°C). Mix the yeast with the milk and stir to dissolve it.step 3
Separate the whites from the yolks. In a large bowl, mix the sifted flour, warm milk and yeast, oil, salt, sugar and egg yolks and mix with a fork. When it is smooth, add the lukewarm butter.step 4
Cover the bowl with plastic wrap and wait for 2 hours or for the volume of the dough to double.step 5
While your pan heats, beat the egg whites. The egg whites are at room temperature. The pan needs to be extremely hot. After that, decrease the hob to medium heat.step 6
Carefully incorporate the egg whites to the batter. Try to keep a maximum of air in.step 7
