Piccolo picnic loaf

All the family will enjoy layering up deli ingredients on top of Piccolo cherry tomatoes® for this picnic treat. Slice neatly through the loaf and into the Piccolo for a stunning centrepiece

Ingredients

400g round cob or pain de campagne loaf

4 tbsp pesto

200g Piccolo cherry tomatoes®

100g brie, sliced

few leaves of baby spinach

3 grilled yellow peppers, from a jar, drained

60g ham

50g cheddar, sliced

1-2 tbsp mayonnaise, to serve

Method

1. Cut the loaf in half horizontally, then using a spoon and/or your hands, scoop out most of the inside of the dough, getting as close as you can to the edge without breaking the crust (you can use the leftover dough to make breadcrumbs – ideal for the freezer).

2. Spread the pesto along the bottom of the loaf, then lay the Piccolo cherry tomatoes® in a layer on top. Add the sliced brie and the spinach, then continue layering the rest of the ingredients. Finishing by spreading the mayonnaise on the top loaf, then place in its original position.

3. Tightly wrap the loaf in cling film or reusable food-grade wrap and chill in the fridge for at least 2 hrs. When ready to serve, remove the wrapping and cut into slices.
