Method

  • step 1

    Cover the lentils, turmeric and tamarind paste with 500ml water. Add some salt and boil for 15 mins or until very soft. Skim off any foam that forms on the top. Meanwhile, heat 1 tbsp of the oil and cook the onion, garlic and ginger until golden, about 5 mins.

  • step 2

    Add the curry powder and cook for a further 2 mins. Pour in the lentil mixture and cook for another 10 mins.

  • step 3

    Meanwhile, heat a griddle pan until very hot. Rub the remaining oil over the aubergine slices and season. Cook for 2-3 mins each side until cooked through and charred. Eat with basmati rice, lime or mango chutney and a sprinkling of coriander, if you like.

Lovely recipe. I used slightly less Tamarind (about 1/2 tbl sp) and also added some garam masala at the same time as the curry powder. The dollop of mango chutney added the bit of sweetness it would have otherwise been missing. Great for an easy, budget friendly, mid-week veggie meal

Is it really 500ml water for 100grams lentils?Mine turned out like soup and I've had to cook it all for another 30 mins to reduce it. Did I do something wrong? I've been back over the recipe and checked my scales and measuring jug. I'm very confused.

Hi, thanks for your question. 500ml is correct but it is quite a lot of water unless using a wide pan so we've now amended the recipe to use 350ml. This should be adequate for the red lentils. We hope this helps. Best wishes, BBC Good Food Team.

This was a delicious take on a dhal! We couldn't get tamarind paste at the shops, so we used the same quantity of lemon juice instead. My fiancé doesn't like aubergines so we used courgettes instead and it worked nicely.

This was absolutely disgusting, I couldn't eat it, all you can taste is the tamarind paste, this person has obviously gottentheir measurements wrong. What a waste of time and energy.

Yup, the ratio of water to lentils is off. Tastes OK- just OK. I can't say anything about the tamarind paste as I cant get it where I live ( so I used a mixture of pomegranate molasses and lemon juice).

Great recipe. I used the zest and juice of two limes instead of the tamarind paste. As well as the curry powder I added cumin, cayenne powder, ground coriander, garam masala and some more turmeric. I also added a bit of brown sugar to sweeten it.
