Method

  • step 1

    Scoop the seeds from one of the passion fruits into the glass of a cocktail shaker, add the Absolut Vanilia Vodka, passoa, lime juice and sugar syrup. Add a handful of ice and shake well, strain into 2 martini glasses, top up with prosecco, then add half a passion fruit to each. Serve immediately.

TO MAKE THE SYRUP

Make sugar syrup by boiling equal quantities of sugar and water in a pan for about 5 mins, until a syrupy consistency.

I used passion fruit syrup and normal vodka and it was unbelievable. Didn't serve 2 sadly!

tip

Photo shows a fine mousse head you won't get from recipe given (see the video). Add an egg white to the mix and shake before adding ice to create a smoother cocktail with dense foam on top.

Recipe is a little thin and not as tasty as some I have tried but will try using some passion fruit juice I also found adding an extra half tablespoon spoon took the bitterness away

For 3 people and the dilute the alcohol more I recommend. Doubling ingredients and adding 2Xdouble shot of pineapple/passion fruit juice
