  • 2 large bananas, mashed
  • 40g walnut pieces
  • 80g white chocolate drops
  • 350g plain flour
  • 2 1/2 tsp baking powder
  • 100g caster sugar
  • 115g butter
  • 2 eggs
  • 300ml milk
  • 1/4 tsp salt

    Method

    • step 1

      Preheat the oven to 200C / Fan 180C and grease muffin tins.
    • step 2

      Sift the flour and baking powder together into a mixing bowl.
    • step 3

      Add the sugar and salt.
    • step 4

      Melt the butter in a saucepan over a medium heat.
    • step 5

      Remove from the heat and whisk in the eggs and milk.
    • step 6

      Once evenly mixed, fold into the flour with the mashed bananas, the chocolate drops and walnut pieces.
    • step 7

      Spoon the muffin mixture into greased muffin tins and bake for 20 minutes until golden.
    • step 8

      Remove from oven and leave to cool for 10 minutes

    I loosely followed this recipe, using self raising flour and adding cocoa powder. Didn’t use walnuts or white chocolate drops. They tasted so good my 10yr old loved them.

    After reading the reviews I was unsure but I made the muffins regardless, I used self-raising flour instead of plain and added milk chocolate chip and reese chips, they were pretty awesome.

    I am confused why these have such a good rating. I have tried the recipe twice, and they aren't very good. There is too much flour, so they turn out heavy, and insufficiently flavoursome. They are also not the quickest recipe needing to whisk the eggs and butter beforehand. Very disappointing

    Made these with my 2 yr old his first time baking and they are the best muffins ive ever made. Very moist and well risen. Although i just did banana and milk choc chips no walnuts
