Method

  • step 1

    Heat oven to 200C/fan 180C/gas 6. Roll out the pastry and use to line a shallow, loose-bottomed flan tin, about 24cm across. Trim the edges of the pastry and line with baking paper and baking beans. Sit it on a baking sheet, bake for 15 mins, remove the paper and beans, then cook for 5 mins more until pale golden and biscuity. While the pastry cooks, put the greengages into a roasting tin, sprinkle with 1 tbsp sugar, then roast until just softened. Drain off any juices, then cool.

    Arrange the greengages in the pastry case, cut-sides up. Now reduce the oven to 160C/ fan 140C/gas 3. Lightly whisk the eggs, then whisk in the vanilla, remaining sugar and cream. Carefully pour the egg mix around the greengages, then bake for 30 mins until the custard is set.

  • step 3

    Cool the tart in the tin for 10 mins, then remove onto a plate and dust with icing sugar.

I didn't roast my greengages as they were ripe and I didn't add any additional sugar or vanilla, just big tablespoons and it turned out delicious, but too sweet with a nice vanilla taste. I accidentally put a bit too much cream so it's a bit runny but the taste is perfect

Disappointing recipe. I made this yesterday and followed the directions exactly and the filling was like scrambled eggs. This recipe needs more precise instructions. Also my greengages were prob a bit ripe and sweet - "roasting" them as the recipe instructed made them tart and sloppy. Def not…

Made this with raspberries and it was delicious. I have also made it with plums and it worked well. not too sweet which is just how we like it.

Discovered Greengages in my garden and really wanted to try something new - tart turned out to be very good, I agree that perhaps a little more sugar would make it sweeter and didn't notice enough vanilla so would double quantity of vanilla. Overall a very nice dessert and fairly easy to make!
