Marinade:-
- 2 large chicken breasts
- 3 tbsp natural yoghurt
- 1 tbsp lemon juice
- 1 tsp chilli powder
- 1 tsp coriander
- 1 tsp cumin powder
- 1 tsp garlic and ginger crushed
Tikka Masala:-
- 1 medium onion
- 1 tsp fresh ginger
- 2 cloves garlic
- drizzle of oil
- 1 tsp chilli powder
- 1 tsp coriander
- 1 tsp cumin
- 4 tbsp tomato puree
- 3 tbsp double cream
Method
step 1
cut the chicken breasts into pieces, mix together the marinade ingredients and coat the chicken, leave for as long as possible preferably overnight.step 2
Chop the onion and crush the garlic and ginger from the tikka masala ingredients. fry the onion over a medium heat until brown then add the garlic and ginger.step 3
fry for 30 seconds then add the rest of the spices from the tikka masala ingredients.step 4
stir in the tomato puree and fry for 1-2 minutes. add the marinated chicken to the pan, stir and cook for 10 -15 minutes with the lid on, over a medium heat.step 5
add the cream to the pan and gently stir for 5 minutes.step 6
serve the tikka masala with rice.
