Method

  • step 1

    Mix the beans, onion and coriander together, then stir in the oil and vinegar with some seasoning. Top with the tortilla chips.

This is a lovely side dish added finely sliced red chilli for extra bite ;-)

very easy to throw together - I put the onion in some lime juice to 'cook' it first. The garlic infused olive oil is a must.
