  • 3/4 lb. fresh asparagus cut into 1 inch pieces
  • 1 medium yellow pepper, julienned
  • 3 green onions
  • 3 tbsp. olive oil
  • 3 cups diced fresh tomatoes
  • 10 ounces cooked ham, cubed
  • Salt and pepper
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil
  • Pinch of cayenne pepper
  • 1/3 cup grated Parmesan cheese
  • Splash of white wine

    Method

    • step 1

      Saute asparagus, onions and yellow pepper in oil, until onion is translucent and veggies are tender.
    • step 2

      Add tomatoes, ham and wine.
    • step 3

      Mix in seasoning. Sprinkle cheese and heat thoroughly.
    • step 4

      Serve over pasta or rice.

    Did it! Lovely, very 'normal' if you get me...I did it as a stir fry without the ham pieces but served it alongside ham. I'm not much of a fan of asparagus and this makes it really enjoyable. Maybe cut down to 2 tbsps olive oil (but then, is 3/4 lb asparagus a lot?? I used a 'bunch'...so note…
