  • 3 Onions, shredded
  • 2 Cloves of garlic, crushed
  • 15g Butter - or oil
  • 2 Vegatable stock cubes
  • 900ml water
  • 2 tea spoons brown sugar - can use white
  • 2 'Good sized' potatoes, cubed
  • 1 Carrot, sliced
  • 1 Table spoon mixed random herbs - coriander, parsley, dill
  • Salt and pepper

    Method

    • step 1

      Turn hob on and place butter in frying pan or wok on the lit ring. Peel and shred onion and then add to the pan.
    • step 2

      Continually move onions around until soft and golden brown. When onions have gone soft and brown, add crushed garlic and mix.
    • step 3

      In a large pan boil water, add stock cubes, herbs, sugar, salt and pepper. Then add the onion and garlic mix.
    • step 4

      Cut up the potatoes and add to the pan, and then do the same with the carrot.
    • step 5

      Simmer on low heat for an hour.
    • step 6

      Use a hand-held blender or place the soup into a standalone blender and blits untill thick. Then simmer for 10 more minutes.
    • step 7

      Serve with toasted bread and melted cheese, enjoy.

    Made without carrot (ran out) and a teaspoon of herbs (misread recipe) but still very nice and flavoursome.

    Does “shredded” mean grated? Were the onions and carrot small, medium or large and what the hell is a “good sized” potato? What is wrong with weighing ingredients?

    I assumed it meant "roughly chop" rather than being too precise. Also, I don't think the carrots and potatoes need to be too accurate in size, as long as not too small - the potato is probably just got thickening instead of cornflour.

    It was a nice oniony-vegetable soup. Less effort to make than French onion soup. Would make again.
