  • 2 Kilos marrows
  • 2 carrots
  • 2 potatoes
  • 2 onions
  • few lettuce leaves if you wish
  • 2 chicken stock cubes
  • 1/2 tsp mild curry
  • 2l water

    Method

    • step 1

      Peel and wash all the vegetables . Cut the ends of the marrows.
    • step 2

      Quarter all the vegetables and put in a pot.Add the chicken cubes , curry and water.
    • step 3

      Put on cooker and leave it on high flame until it boils then simmer until all the vegetables are tender.
    • step 4

      Liquidize the soup in a liquidizer or hand blender .You can garnish with Crotons .

    Add a little more curry powder and if it a large marrow such as those grown in the garden, you will need to peel it and deseed it. Don't be put off by the peel being tough, the inside will be delicious!

    Very tasty! Nice to have a good recipe for using up marrows. I added a heaped teaspoon of hot curry powder in place of the 1/2 tsp of mild curry powder and it was just right for the adults (slightly piquant for the children).
