Method

  • step 1

    Whizz the bread in a food processor until fine. Mix breadcrumbs and cheese together, tip onto a large plate, then season. Dip the pork in the egg, then press both sides into the breadcrumb mixture to coat all over.

  • step 2

    Heat the oil in a large non-stick frying pan and fry the steaks for 3-4 mins on each side until cooked through. Serve with a crisp salad or try the Swiss-style salad, below.

RECIPE TIPS
MAKE A SIDE SALAD

For a Swiss-style salad, peel 1 celeriac and cut into strips or coarsely grate. Slice 2 red apples and mix into the celeriac. Toss with a dressing made with 3 tbsp mayonnaise, 1 tbsp mustard and a squeeze lemon juice.

I love this dish. Easy to make, perfect mid-week meal, but I also grilled it, which works just as well.

I was disappointed with this because the breadcrumbs burnt although the coating did keep the meat very moist. If I do it again I think I would grill it.
