Method

  • step 1

    Heat a wok until you can feel a good heat rising. Add 2 tbsp oil and, a few secs later, the garlic slices. Stir-fry until they start to turn golden, then using a slotted spoon, spoon onto kitchen paper to drain.

  • step 2

    Toss in the pepper and stir-fry for 1 min or so until softened, then scoop out and set aside. Add the remaining tbsp oil. Heat, then toss in the prawns and stir-fry for another 2-3 mins until cooked and beginning to brown. Add the soy or fish sauce.

  • step 3

    Throw in the spinach and stir-fry until it begins to wilt. Return the peppers and crisp garlic to the wok, then serve immediately.

Really good. Used mangetout instead of spinach and added chilli and Chinese Five Spice. Went down a treat.

This is a really nice recipe that can be made really quickly. I normally add button mushrooms fried with garlic and a full 240g bag of spinach. It keeps till the next day and I add either rice noodles or Singapore noodles to bulk it out.

Really quick and easy. As others have suggested I added some fresh red chilli and added 2 tablespoons of soy sauce as well as a tablespoon of fish sauce. Also used a mix of red and yellow peppers and served it with noodles. Delicious!

This is a mid-week staple in our house - super quick to cook and yummy every time. You can always add in different green veg with this, sometimes I use broccoli or mange tout and I find the Tilda coconut rice perfect with this dish.
