Method

  • step 1

    Halve the tomatoes. Thin the pesto sauce with a little water and brush half on the tomatoes. Cook under a hot grill for 5-7 mins until softened. At the same time, toast the slice of bread, then spread with the remaining pesto mix. Top with the hot tomatoes, squashing them slightly.

I have just made this for supper and it was very yummy. I put slices of mozzarella on top & plenty of black pepper. A really warming, quick and inexpensive supper dish. I shall definitely make this again.

It's easy to make and very tasty. I sometimes put a little grated parmesan on top.
