Method

  • step 1

    Heat a griddle pan or grill. Brush each aubergine slice with olive oil. Cook in batches for 2-3 mins, turning once, until softened and lightly charred. Arrange on a serving platter and season with pepper.

  • step 2

    To make the dressing; whisk the remaining ingredients until well combined and season to taste. Drizzle over the grilled aubergines, then serve at once.

TAHINI

Tahini is a paste made from sesame seeds. It can be eaten plain with bread or combined wih chickpeas, oil and garlic to make houmous. It's available in larger supermarkets or specialist shops.

question

I've never cooked aubergines before. Can I pre griddle the aubergine slices earlier in day then warm through in oven just before dressing and serving?

Thank you for your question. Yes, you could pre-griddle the aubergine, allow to cool, cover and pop in the fridge and then reheat when you're ready. Let us know how you get on!

Lovely but the tahini does overpower a bit so would halve the quantity. Great with the moroccan spiced tuna as suggested :o) Good for weekday meal.

I used the amount of yogurt specified in the recipe but used a lot less tahini paste (I used about half a teaspoon) and used about 1/4 of a clove of garlic as I'm not a huge fan of raw garlic! I also missed out the fresh coriander. It was really nice though and will make it again
