Method

  • step 1

    Heat oven to 200C/180C fan/gas 6 and line a baking tray with foil. Mix the chilli sauce with the orange zest and juice, garlic, curry paste and ¼ tsp salt. Add the chicken and coat really well.

  • step 2

    Arrange the drumsticks on the foil, spaced apart. Coat the chicken with any marinade left in the bowl, then roast for 35-40 mins until tender. Wrap in foil or pack into a food container.

MARINATING

Marinate the chicken overnight in a sealed container (before cooking) to really enhance the flavours.

Oh I roasted for 30 mins covered and then uncovered till fully cooked. You get a nice sauce that way :-)

Loved that it was so easy to make. just marinate and bake. I used 1.5 chicken jointed, zest and juice of one orange, ½ cup ketchup, one full packet of thai red paste. I did add a bit of honey and found it too sweet. Will omit it next time.

I made this as dinner for me and my fiance. As we like the food with lot of taste, I used more of all the spices, but I think I've used to muche orange juice. Also, next time I'll do this, I'll put the drumsticks in the oved covered, because we like our food more humide.
