Method

  1. Mix together the lemon curd, yogurt and fromage frais. Roughly mash the strawberries, then gently stir them through the lemon mixture.
  2. Drop half the shortbread into 4 glasses and top with half the fruit yogurt. Sprinkle over the remaining shortbread and finish with the rest of the fruit yogurt.

Give it a twist

Try different fruit curds - orange curd will give a sweeter edge than lemon, passion fruit curd will add an exotic touch. Swap raspberries or cherries for the strawberries.

    This was very easy and very popular with all the family but we all felt it could have done with more of a strawberry flavour and another time I would use more strawberries and just chop the extra and fold them in as well to see if that helps. Still very good though, and wonderfully simple.
