Method

  • step 1

    Heat oven to 150C/130C fan/gas 2. Line two 20cm cake tins. Put the flour, cinnamon and bicarbonate of soda in a big bowl, then stir in the sugars, making sure there are no lumps of sugar. Add the oil, eggs and apples, and beat everything together. Fold in the walnuts then divide the mixture between the tins and bake for 45 mins or until a skewer comes out clean. Allow to cool for a few mins in the tin then remove and cool completely on a wire rack.

    For the icing, beat all the ingredients together then chill until the mixture is thick but spreadable. Spread half the icing on top of one cake, sandwich with the other and spread the remaining icing on top

FOR A LIGHTER FLAVOUR

Try golden syrup instead of treacle in the icing if you prefer a lighter flavour.

I used half self raising and half plain flour and had the oven at 160c. Definitively not to rush the cooking. It was airy, light, moist, flavoursome and not sickly sweet. Loved the rich icing.

I made this cake this weekend , unfortunately nobody liked it. Why did mine turn out very heavy, dark, tasteless apart from the walnuts. Texture is more like a bread pudding. What has happened with my cake . Topping very nice . What has gone wrong with my cake?

I found that this didn't taste of apples at all! I'd frozen half so when I made the second half I coated the inside with a sweetened expresso coffee and stirred coffee grounds into the icing, far better!

I made this today and the cake turned out pretty well. It's light and very moist. I'm not overly keen on the icing though and I used golden syrup instead of treacle.

The cake part of this recipe is absolutely fab - really moist, tasty cake. However the icing part is overall very disappointing - far too sweet, I wish I had gone for simple cream cheese frosting instead, no golden syrup or treacle or anything. Also, for any novice/absent minded bakers out there…
