Sticky Orange Topping:

  • 220g castor sugar
  • 125ml water
  • 1 vanilla pod, split
  • 2 oranges, very thinly sliced

The Cake:

  • 4 large eggs
  • 220g castor sugar
  • 5ml vanilla extract
  • 150g self-raising flour
  • 150g butter, melted
  • 110f ground almonds

    Method

    • step 1

      Preheat the oven to 160C.
    • step 2

      For the sticky orange topping:
    • step 3

      Place sugar, water and vanilla in a 2.5 liter, 20cm non-stick frying pan that is ovenproof, over a medium heat. Stir continuously until the sugar has dissolved. Add the orange slices and simmer until soft, for about 15 minutes. Remove from the heat and set aside.

      For the cake:

      Place eggs, sugar and vanilla in a bowl of an electric mixer and whisk until thick, pale and bout tripled in volume, about 8-10 minutes.

      Sift the flour over the egg mixture and fold through. Fold through the melted butter and ground almonds.
    • step 7

      Pour the cake mixture over the oranges and bake about 40-45 minutes, or a skewer comes out clean.
    • step 8

      Turn out on a platter to serve.

    tip

    I lined a baking tin with baking paper, layered the orange then dough, poured the sit-up on top and baked for 45 min. Beautiful and moist. Will be making again 😍

    question

    I would like to try baking this cake and it is not clear what exactly to do with the simmered orange. Do we just remove them from syrup to layer it in the pan on a non stick parchment paper or layer it with the syrup before pouring batter in? Thanks

    I’ve just made this, I lined a baking tin with paper, layered the orange put dough on top and added the sit-up to top a and baked it. It was lovely and moist. Will deffo make again!!

    Great recipe! Everyone loved it. I made it twice though. The first time I followed the instructions and it was a bit dry, the second time I did it a bit like Mary Berry's lemon drizzle cake, I poked holes and drizzled the remaining syrup...unless I was supposed to add all the syrup at the start -…
