Method

  • step 1

    Heat oven to 190C/170C fan/gas 5. Line a bun tin with 8 paper cases. In a large bowl, mix the flour, baking powder and sugar with a pinch of salt.

  • step 2

    In a separate bowl, beat the egg, melted butter and milk for 20 secs; add the mashed banana and beat for a further 5 secs until everything is nicely mixed.

  • step 3

    Pour the banana mix into the flour and fold everything together. Once it is almost combined, add 85g of the white chocolate – the mixture will still look a little lumpy. Spoon the cake mix into the paper cases and bake for 18-20 mins until golden and risen, and a skewer inserted comes out clean. Cool on a wire rack.

  • step 4

    Meanwhile, melt the remaining white chocolate over a pan of barely simmering water. Allow to cool a bit, then spread on top of the cakes. Add a couple of slices of banana and sprinkle with cinnamon.

TIP

Kids will love these. To stop your banana slices browning, brush with lemon juice, or use dried bananas if you're baking ahead.

Why did mine go flat when I took them out of the oven?

Hi, thanks for your question. If they had risen but then sunk when removed from the oven then the most likely reason is that they weren't fully cooked (either your oven is too low or they needed longer) - a cocktail stick or skewer inserted into the middle should come out clean. Also avoid opening…

didnt rise at all, if you are substituting the white choc for dark make sure it isnt too dark as mine were quite bitter

Works wonders! Used spelt as didn't have WG flour, and used some chopped up fudge I'd made earlier in the week in place of chocolate....didnt even get my hands on one, family had demolished them

Love this recipe. Really quick, simple and delicious. I like that it uses wholemeal flour for extra fibre. I used a very overripe banana and it gave great flavour. I don’t think it needs any extra chocolate on the top as is sweet enough on its own. Will make again.
