Method

  • step 1

    Heat grill to medium. Rub the chicken all over with 1 tsp of the olive oil and the paprika. Cook for 4-5 mins each side until lightly charred and cooked through.

  • step 2

    Mix the salad ingredients together, season and add the rest of the oil. thickly slice the chicken and serve with salad.

Made this last night, and it was delicious! Only change I made was to reduce the amount of onion. Simple, fresh ingredients for the salad. Easy, flavourful chicken. Surprisingly filling!

Simple ingredients, super fast to make and yet totally fresh and delicious. I didn't have red wine vinegar so cut a slice of lemon and squeezed through the salad. Made this for a midweek meal with a chunk of french bread and butter. So good!
