  • 110g butter
  • 1 egg
  • 225g self raising flour
  • 225g sugar
  • 1/2 tsp baking powder
  • 1 tsp ground ginger

    Method

    • step 1

      Preheat the oven to 150C/fan 130C/gas 2.
    • step 2

      Melt the butter, and mix in the beaten egg. (margarine can be used instead of the butter, but they do lose some of the melt in the mouth quality).
    • step 3

      Mix together the dry ingredients, and then add the butter/egg mix. Make sure these mix thoroughly, it may be necessary to use your hands.
    • step 4

      Shape the resulting dough into small balls roughly 2cm across.
    • step 5

      Place WELL APPART on a thoroughly greased tray, (About 6 on an average sized tray) and bake for 20-25 mins. (If they are still a bit pale after this, turn the oven up a fraction to brown them slightly).
    • step 6

      Leave to cool completely on the tray.

    Can I put these on baking paper or do they need to be on a greased tray ? Thanks

    These biscuit bake really well and I had lovely crunchy cracked top biscuits. I did find them to be not very gingery and will double the ginger next time. Also found them to be a bit too sweet for me so will reduce the sugar.

    If the dough is too stiff to work/hold together, what is the best solution?

    Also, is it possible to use honey instead of sugar? If so, what quantity.

    I thought these were lovely (as did my tasters) with just a bit of extra ginger. To avoid the hot butter and egg problem, I added the butter first to the dry ingredients and mixed thoroughtly before adding the egg. I got 13 on a baking tray by using very small balls (11g each). Has anyone tried them…
