Method

  • step 1

    Mix 2 tbsp oil with the honey, mustard, lemon juice and some seasoning. Bring a pan of water to the boil. Add the broccoli, cook for 3-4 mins until tender but with a slight bite, then drain.

  • step 2

    Heat the remaining oil in a frying pan. Add the garlic, sizzle for a min, then tip in the mixed grain pouch, using the back of your spoon to separate the grains. Add the broccoli, mustard dressing, herbs and radishes. Give everything a mix to combine, season to taste, then gently stir through the salmon. Serve warm or cold.

Very tasty recipe. I added a little soy sauce to the grains after frying for umami. I also added zest of one lemon, a can of black eyed beans and omitted the parsley, instead doubling up on the dill.

Really tasty recipe, but found I had to add a bit more honey and mustard than suggested to get a good tasty dressing. I also found that the portion sizing that was given was way too much for 2 people for lunch. This recipe is enough to comfortably feed 4 people for lunch or 2 for a hearty dinner.
