I am new to baking, my basic scones, cup cakes and muffins are turning out perfect, but every time I attempt a sponge cake, the middle of the cake sinks and is still wet. .I follow the recipes to the letter, what am I doing wrong?

Thank you LuLu, we have a gas oven, and bake the sponge cakes on the middle shelf, the edges of the cakes are done to nearly burnt, but middle sinks + wet. I left the cakes in for 10 mins over the prescribed time. Should I move the oven racks higher or lower in the oven do you think?

Hi, We haven't tested this recipe with an egg replacer but we have vegan sponge cakes on this websites that use an egg replacer like flax seeds. I hope this helps, Lulu
