Points to remember:

  • Take 4 large glasses and pour 50ml Pimms into each one, then share out 4 large (or 8 small) sliced strawberries and ¼ cucumber, cut into ribbons with a vegetable peeler. Put 1-2 scoops of lemon sorbet into each glass and top up with soda water. Garnish with mint and patterned straws.

Tip:

Get ahead and leave the fruit and Pimms steeping in the glasses in the fridge for up to an hour before your guests arrive, add the sorbet, mint and sparkling water just before serving.
