Points to remember:

  1. Put 200g spaghetti in a wide saucepan or deep frying pan off the heat.
  2. Add 100g cherry tomatoes, handful olives, 2 garlic cloves, sliced, a pinch of chilli flakes, zest of 1 lemon and season with salt and pepper.
  3. Pour over 2 tbsp olive oil and 500ml boiling water.
  4. Turn the heat on and simmer for 10-12 mins, tossing the spaghetti through the liquid every so often until it is cooked and the sauce is reduced and clinging to it. Add a splash more hot water if the sauce is too thick or does not cover the pasta while it cooks.
  5. Once the pasta is tender squeeze over the juice 1 lemon, add a few basil leaves, pinch of chilli flakes and a handful grated Parmesan.
  6. Serve with more shaved Parmesan and fresh basil if you like.

I'm surprised this recipe has so little comments. This one is great: delicious and simple. My GF loves it, the only thing I find a bit sad is that she likes the pasta overcooked.

Fantastic. Did double the amount and kept adding water to keep the pasta moist until al dente. Added a knob of salted butter at the end which made the sauce even richer and glossier.

You could create all manner of dishes with the addition of prawns etc if you want some extra protein. Great…

Pardon me for asking, but where do I find the save button for this recipe? Usually it's under the picture but I can't find it on this video page. I want to try it but already have meals planned for the next couple of days and don't want to lose it.
