- 3oz margarine
- 4oz caster sugar
- 2 medium egg yolks
- 2 tbsp milk
- few drops vanilla essence
- 6oz self raising flour
- pinch salt
TOPPING:
- 2 medium egg whites
- 4oz caster sugar
- 2oz desiccated coconut
- chopped cherries and nuts
Method
step 1
Heat oven to 160c (325f) gas mark 3.step 2
Grease and line a tin 28x18cm (11x17inch).step 3
Cream margarine and sugar, beat in egg yolks, milk and essence.step 4
Fold in the flour and the salt and spread in the tin.step 5
Beat egg whites stiffly, fold in sugar and coconut.step 6
Spread mixture over base and sprinkle with cherries and nuts.step 7
Bake for about 45 min. Cut into slices when cool.
