  • 3oz margarine
  • 4oz caster sugar
  • 2 medium egg yolks
  • 2 tbsp milk
  • few drops vanilla essence
  • 6oz self raising flour
  • pinch salt

TOPPING:

  • 2 medium egg whites
  • 4oz caster sugar
  • 2oz desiccated coconut
  • chopped cherries and nuts

    Method

    • step 1

      Heat oven to 160c (325f) gas mark 3.
    • step 2

      Grease and line a tin 28x18cm (11x17inch).
    • step 3

      Cream margarine and sugar, beat in egg yolks, milk and essence.
    • step 4

      Fold in the flour and the salt and spread in the tin.
    • step 5

      Beat egg whites stiffly, fold in sugar and coconut.
    • step 6

      Spread mixture over base and sprinkle with cherries and nuts.
    • step 7

      Bake for about 45 min. Cut into slices when cool.
