  • 120g of good quality Dark Chocolate (<70% cocoa solids)
  • 200g of Butter
  • 3 Medium Eggs
  • 400g of Caster Sugar
  • 165g Plain Flour
  • 20g Cocoa Powder
  • 1tsp of Baking Powder
  • 3tsp Vanilla Extract (or Vanilla Paste)
  • 60g bar of White Chocolate (chopped)

    Method

    • step 1

      Preheat oven to 180C/fan 160C/gasmark 6.
    • step 2

      Melt the chocolate and butter together over hot water (can be melted in the microwave if you're in a hurry).
    • step 3

      Beat together the eggs, sugar and vanilla extract/paste, add to the melted chocolate and butter, mix.
    • step 4

      Sift together the flour, cocoa and baking powder, then fold into the rest of the mix.
    • step 5

      Add the chopped white chocolate pieces and pour into a lined and greased baking tray.
    • step 6

      Cook for 22 minutes (the knife should come out clean when cooked), allow to cool, cut into 12 and serve.

    As others have said, it takes longer than 22 mins in the oven but worth it. Second time I made it I used soft dark brown sugar instead of caster sugar, 1 tablespoon of Cointreau instead of the vanilla essence, zested 1 orange and used dark chocolate with orange. Yum!

    My go to brownie recipe... but we use half the amount of sugar. You can cook for longer, but then they are not so squidgy, more like cake.

    Omg these are sooo good. As others have said, they required considerably longer than 22 mins, but unbelievably good and worth the wait.

    Absolutely delicious, squidgy inside but with a crispy exterior. I used unsalted butter. The only gripe was it took much longer than 22 minutes, nearer an hour. Just keep checking till it's done, it's worth the wait.
