  • 100g soft margarine
  • 150g wholemeal self raising flour
  • 50g caster sugar
  • 50g dried fruit

    Method

    • step 1

      Preheat oven to 170C/ gas mark 4.
    • step 2

      Sprinkle a very light dusting of flour onto the baking tray
    • step 3

      Beat the margarine and sugar together until fluffy. Stir in the flour and chopped dried fruit to make a soft dough.
    • step 4

      Turn out the dough onto a lightly floured work surface and divided the mixture in to 10-12 even sized balls
    • step 5

      Place them apart on the baking tray and flatten well with the back of the tablespoon.
    • step 6

      Cook for 12-15mins until evenly browned.
    • step 7

      Let cool a little before removing from the tray and placing to cool on the wire wrack.

    the perfect recipe for this evening when I suddenly had an urge for something sweet! I used half and half brown and white sugar, and I used white flour as that's what I had in the house. Will make this again!

    I used salted butter rather than margarine, and added desiccated coconut on top of the 50 grams of dried fruit - seriously the best cookies ever :)
