  • 125g Butter
  • 125g Caster Sugar
  • 125g Self Raising Flour
  • 1tsp Baking Powder
  • 2 eggs, beaten
  • 1tsp Vanilla Essence

    Method

    • step 1

      Preheat the oven to 195C/fan 175C/gas 3.5
    • step 2

      Cream the butter and sugar together until it becomes a pale yellow/white colour.
    • step 3

      Sift in the flour and baking powder. Then add the eggs and vanilla essence. Fold together until it is all combined.
    • step 4

      Place the mixture in to greased tins or cupcake cases.
    • step 5

      Bake in the oven for 15-20 minutes until golden brown and springs back when gently pressed. Once baked leave to cool for 30 minutes.

    Don't make this cake. Waste of time, money, and effort. Cake mix was dry, it was as if I was making a cookie mix. Followed instructions of greasing tins and poured mixture in and put oven 175°c fan for 15/20 minutes like it said. Timer went of after 17 minutes, realising that the outside was cooked…

    My advice to anyone following this recipe is to use 3 eggs. Put eggs in and whisk one at a time BEFORE you sift and fold the flour in! Also, use 2 tsp baking powder and a dash of milk (3 tbs after eggs) 30 minutes at 180 will cook it through.

    My mixture had alr cakey texture but in the oven it took double the amount of time it advertises to cook through. Also it came out kinda crusty and musty. I'm putting a second batch in since the first one didn't rise as much as I needed it to.
