Baked Beans
400g tin Haricot beans
400g tin Cannellini beans
200g streaky bacon (chopped) or lardons
1 Onion (finely chopped)
2 Garlic cloves (finely sliced or grated)
2 x 400g tin chopped Tomatoes
2 tbsp Tomato purée
150g soft dark brown sugar
150ml red Wine Vinegar
75ml Rapeseed Oil
2 tbsp Worcester sauce
2 tbsp Paprika
Salt & Pepper
1 red Chilli (finely chopped, seeds in) Add this if you want your baked beans spicy!
150ml Water
Soda Bread
400g tin Haricot beans
400g tin Cannellini beans
200g streaky bacon (chopped) or lardons
1 Onion (finely chopped)

2 x 400g tin chopped Tomatoes
2 tbsp Tomato purée
150g soft dark brown sugar
150ml red Wine Vinegar
75ml Rapeseed Oil
2 tbsp Worcester sauce
2 tbsp Paprika
Salt & Pepper
1 red Chilli (finely chopped, seeds in) Add this if you want your baked beans spicy!
150ml Water
340g wholemeal flour
340g strong white flour, plus extra for dusting
2 tsp Bicarbonate of Soda
1½ tsp salt
1 tsp pepper
85g butter (softened), plus extra to serve
625ml buttermilk

Method
step 1
In a large saucepan, heat the rapeseed oil over a medium heat. Add the streaky bacon and fry until crisp (about 10 minutes).

Add the onion and garlic (and chilli if using) to the pan and cook until the onion is soft (about 10 - 12 minutes).

Add the tinned tomatoes, tomato purée, sugar, vinegar, Worcester sauce, smoked Paprika and 150ml water. Bring to the boil and then add the beans.

Reduce the heat to low and cook for 1 - 1½ hours, or until you have a thick sauce with soft tender beans.

Meanwhile, make the soda bread. Preheat the oven to 200C Gas 6.
step 6
Put all the ingredients for the Soda bread together in a bowl and mix. Then form the mixture into a loaf shape of your choice.

Place on a baking tray, dust with flour and bake in the oven for 45-50 minutes, or until the loaf is golden-brown and sounds hollow when tapped.

Remove from the oven and leave to cool. Season the beans with salt & pepper, then serve with slices of toasted, buttered soda bread
