  • 1kg beef mince
  • 1 large onion diced
  • 2 garlic clove diced
  • 2 400g chopped tomatoes tinned
  • Salt and pepper
  • 2 red chillis diced or 2 tsp chilli flakes
  • 600ml beef stock
  • 1tsp smoked paprika
  • 1tsp oregano
  • 1tsp cumin seeds crushed and toasted
  • 1tbsp cayenne pepper

To serve

  • 1kg beef mince

  • 1tbsp cayenne pepper
  • Long grain rice
  • 1tsp turmeric to add to rice water
  • Tbsp each soured cream
  • 1 Lime cut into wedges
  • Cool doritos
  • Grated cheddar
  • Sprinkle of coriander leaf to garnish

    Method

    • step 1

      Preheat large non stick pan on medium to high heat. Toast cumin seeds for one minute and then add mince until browned. Season with salt and pepper.
    • step 2

      Add onion and garlic to the pan and fry until soft. Then add chilli for 2 mins. Season.
    • step 3

      Add tomatoes,stock,paprika,oregano and cayenne. Bring to a simmer and cook for 3 hours.
    • step 4

      30 minutes before the chilli is cooked boil rice to packet instructions. Add turmeric to the water. To serve, ladle rice in the middle of the plate.Add chilli on top,then cheese,then soured cream on top next to a lime wedge and sprinkle over coriander leaf to garnish. Have doritos as a side for dipping.
