Method

  • step 1

    Lightly butter a 1-litre microwavable gratin dish or a 20cm microwave cake dish. Beat together the butter, sugar, flour, eggs and milk with an electric hand whisk for 2-3 mins, until light and fluffy.

  • step 2

    Fold through the white chocolate and most of the berries, pour into the dish, then microwave on High for 10-12 mins, until set and dry on top. Leave to stand for 5 mins, before dusting with icing sugar and serving with the reserved berries and custard.

RECIPE TIPS
MAKE IT IN THE OVEN

If you don’t have a microwave, bake at 180C/fan 160C/gas 4 for 20 mins until the cake mixture is risen and golden.

MAKE IT WITH PEAR AND CINNAMON

Follow recipe, making batter up to the end of stage one. Drain 2 x 400g cans pears in syrup, chop into chunks. Mix pears with 3 tsp ground cinnamon and a handful sultanas. Fold pear mix through batter, pour into dish. Microwave on High for 10-12 mins, leave to stand for 5 mins, then sprinkle with icing sugar.

Gorgeous easy pud! Used fresh raspberries, blackberries and chunks of white chocolate. It took longer in the oven than stated, would put the oven up to 180 next time. Yummy with custard.

Brilliant quick pudding, we all loved it. Served with cream as we happened to have some open. Reminded me of the puddings in tins we used to have as a kid, but much nicer!
