Cut the limes into 16 pieces. Squeeze 2 pieces of lime into each of the 8 glasses, then drop in the squeezed flesh. Chop the watermelon and divide among the glasses, and throw in some ice cubes. Pour gin over each and top up with chilled tonic water.

So simple to do and so tasty! Did this for friends who came over for an al fresco dinner and received so many compliments. This is way fancier than the regular G&T.

Agreed as above .. I tried this amazing recipe with my favorite Gin ... a smooth fruity little number by the name of Oliver Twist London Distilled Gin and used 2 tbsp of Gin per person (In fact we used 3 TBSP for the second round as they were so good).

If you want to try this using Oliver Twist…

Yes i would say at least two tablespoons of gin per person.

Um, 2 tablespoons of gin to serve 8 people? Should this recipe not contain about 8 times that amount of gin? I think it might if I try it anyway...

I used 20 tablespoons by accident and was blacked out by 8 LOLOLOLOL
