      Put the butter in a bowl and beat using electric beaters until soft and creamy. Beat in the sugar, then the egg and vanilla, and finally the flour. If the dough feels sticky, add a little more flour and knead it in. Bring together into a ball and use to make our raspberry dodgers, vanilla spirals, checkerboard and ginger biscuits.

    I am in the US. Do you have any recommendations for substituting for the golden caster sugar? Would it be closest to light brown sugar, or turbinado sugar, or something else?

    Just use bog standard castor sugar? Turbinado sugar is called Demerara here in UK. You can blitz it to make the crystals smaller.

    How long will the dough keep in the fridge and can you freeze the dough?
