Method

  • step 1

    Heat the oil in a large pan over a medium heat, then tip in the mince and break it up using a wooden spoon. Stir in the garlic and chilli, and cook for 10 mins until the mince is cooked through. Add the herbs and spices, and cook for a minute more.

    Pour in the passata, the reserved liquid from the beans, the bouillon powder and peppers. Cover and cook for 15-20 mins until slightly thickened. Tip in the beans and cook for 3-5 mins more.

  • step 3

    Meanwhile, prick two of the sweet potatoes all over using a fork, then microwave on high for 7-10 mins until tender. Mash one of the avocados with half the lime juice in a small bowl.

  • step 4

    To serve, halve the potatoes and spoon over half the chilli, then finish with the mashed avocado. Chill the remainder for another day. The chilli will keep covered and chilled for four days or frozen for three months. Reheat in a microwave or pan over low heat until piping hot. Serve with the remaining sweet potatoes and mashed avocado and lime juice, as described above.

The ingredients list has 4 sweet potatoes but on step 4 mentions just 2. What about the other 2, how to use them? Thanks.

Hi, thanks for your question. This is a bit confusing as the recipe was originally intended to serve 2 people over 2 days (so 4 portions in total). The remaining 2 sweet potatoes would be microwaved in the same way and served with the remaining chilli. If serving 4 portions all on the same day then…

Unusual not to have onion? Or have I missed it? Does the water from the bean tin have special attribures c.f, that of chick peas? Many thanks for your advice.

Hi, thanks for your question. There's no onion in this recipe but it would be fine to add some if you like. The bean liquid will help thicken the sauce and add a slight velvety texture that you won't get with just water. We hope this helps. Best wishes, BBC Good Food Team.

Hi, thanks for your question. Yes the main contributor to the sugars is the baked sweet potato with smaller amounts from the passata and peppers.
