Method

  • step 1

Halve any strawberries that are larger than a mouthful. Divide between 4 wine glasses and pour over the wine and cassis. Tuck a mint sprig into each glass. Leave to soak for up to 1 hr, then dust each with icing sugar and serve with crisp biscuits.

RECIPE TIPS
MAKE IT POSHER

Sprinkle granulated sugar over a saucer and mix in a few drops of pink food-colouring. Dip the rim of each serving glass first into a thin film of water, then into the sugar. Leave to dry, then carefully fill the glasses.

very light and refreshing, how much cassis to use, too much and it can be over powering too little and why bother! Its all down to personal taste but what does 4 cassis really mean?
