Method

  • step 1

    Mix together the chilli sauce, ginger, soy sauce and lime zest. Pour over the chicken drumsticks and leave to marinate for as long as you can (put them in the fridge if marinating for any longer than 30 mins).

  • step 2

    Heat oven to 190C/fan 170C/gas 5. Place the drumsticks in a shallow baking tray, shaking off any excess marinade. Roast for 20 mins, then pour over the leftover marinade and cook for 5 mins more until sticky and browned.

Try using this marinade on pork chops or salmon steaks - or, for a veggie option, portobello mushrooms.

Measurements seem wrong almost everywhere, makes a pitiful amount of marinade and then chicken is completely undercooked being in for such little time. It's fine if you're an experienced cook and can spot these things but why make it any harder than it needs to be?

This is such a lovely recipe. I added at least twice the amount of ginger following suggestions from other reviewers but otherwise stuck to the recipe. The lime zest makes it and this will become a regular one for us. I think I will use the marinade on chicken thighs to make it a more substantial…

Sticky chicken drumsticks - "Roast for 20 mins...." but at what temperature? Perhaps 'roast' means a certain temperature, but how would I know? It would be really helpful if ALL the information necessary was included in this recipe. So frustrating for people not very good at cooking who struggle…

Did 25 drumsticks for a party today and they were very well received. As suggested added extra ginger and cooked at 190 degrees C fan oven. Easy to prepare party food. Will try on chicken thighs for a tasty midweek supper.
