Method

  • step 1

Put the apples, sugar, lemon juice and cinnamon in a small pan with 1 tbsp water. Cover and cook over a medium heat for 5-10 mins, or until the apples are tender when pierced with the tip of a knife.

  • step 2

If you prefer a smoother mixture, continue to cook for a further 5 mins, uncovered, stirring frequently to break down the apples into a compote.

Recipe tip

Use a mix of cooking and eating apples for a variety of textures and a more rounded flavour. Cook any cooking apples for 5 mins, then stir in the eating apples and cook for another 5 mins for a chunky texture.

question

I’m stewing a load of apples into Kilner jars for New Year’s Day lunch in our Village Hall, and will cook crumble separately. What approximate serving size of stewed apple would you recommend per person?

Gala apples don't need any sugar

question

Can I store stewed apples?

Rob Eggleshaw

Pretty sure you can make up a batch and freeze it for use in the future...in fact, that's what I'm about to do now due to our tree in the garden giving up a ton of apples!!

I made this as the base for an apple crumble and it worked perfectly. My husband wanted more crumble but it worked perfectly as a base.

question

Is this recipe good for using the apples to make fried hand pies?

Hi, thanks for your question. It is very similar so should be fine, although we haven't tried it in hand pies. We also add a bit of butter the filling for our hand pies (bbcgoodfood.com/recipes/apple-hand-pies). Best wishes, BBC Good Food Team.
