Method

  • step 1

    Heat oven to 200C/fan 180C/gas 6. Put the lasagne sheets in a large bowl and cover with boiling water. Soak for 5 mins or prepare according to pack instructions. Meanwhile, squeeze as much water as possible from the spinach, then mix with the feta, nutmeg and some seasoning. Drain the pasta, then cut each sheet in half vertically. Spoon 4 tbsp of the filling along the centre of each half, then roll up to enclose. Place in a lightly oiled baking dish.

    Mix the olives, capers and tomatoes together in a bowl, season, then spoon over the cannelloni. Sprinkle with parmesan, cover with foil, then bake for 20 mins.

RECIPE TIPS
EAT SPINACH

Spinach is an excellent source of vitamins A, C and E, folic acid, iron and zinc. Eat it raw in salads or add towards the end of cooking, to give the leaves just enough time to wilt and retain as much goodness as possible.

SUPERFOOD WATERCRESS

Watercress is classed as a superfood because it is so high in vitamin C and antioxidants. Keep it in the fridge to add to salads and sandwiches. Its peppery flavour is delicious in mashed potato, too.

Add about a teaspoon of oil ( I use EVOO), to the pasta water, pasta won't stick together - rolling boil, add pasta sheets for 5 mins. I do 4 sheets at a time depending on size of pan.

I found this worked really well- the quantities were fine once I’d cut each lasagne piece into 2: providing 12 cannellonis- made half of them with violife vegan feta which worked well. Probably would try cannelloni tubes next time - as could do it as a fully vegan dish and would be easier- less…

Not a very successful recipe. Would not recommend it.

Like many others I used cannelloni tubes. To add flavour I incorporated hopped peppers from a jar, grated fennel, grated carrots and grated courgettes. To make life even simpler a jar of pasta sauce works great as a topping.

I liked this - but surely there's something wrong with the quantities in the recipe: a kilo of spinach to fill just 4 sheets of lasagne (?) I used just 500 g of spinach and soaked 6 sheets of lasagne - but there was still far to much filling and I ended up soaking another 3 sheets of lasagne to use…

I saw the 4 out of five stars review. But did not read any reviews. A kilo of spinach.....in the end i used approx 12 sheets.

Also i was cursing trying to cook sheets of horrible gluten free lasagne. Which amalgamated together. Only cook sheets one or two at a time, lesson learnt.
