Sticky lime & coconut chicken drumsticks
These sticky chicken drumsticks are perfect for a summer picnic or party. You could serve them warm or leave to cool before packing into a container
- 3 tbsp mayonnaise
- 1 tbsp mango chutney
- ¼ tsp mild curry powder
- squeeze of lemonor lime juice
- 150g cooked North Atlantic prawns
- 6 small sub rolls
- 1 small Little Gem lettuceleaves picked
- small chunk of cucumberthinly sliced

Method
step 1
Mix the mayonnaise, mango chutney and curry powder with a squeeze of lemon or lime juice in a bowl. Stir in the prawns, then chill until you’re ready to assemble.
step 2
To serve, split the sub rolls across the top, line each one with a lettuce leaf and a few slices of cucumber, then spoon in the prawn filling.
Recipe tip
If you’re travelling for your picnic, split the rolls before leaving and pack the prawn filling, lettuce leaves and cucumbers into separate containers to assemble the subs later.

The mayonnaise mixture was great but the prawns weren't great. One tip 2 tablespoons of mayo would have been more than the 3 in recipe.
