Method

  • step 1

Tip butter beans into a shallow microwave dish. Stir in half the lemon oil, half the parsley and all the chorizo. Top with the cod fillets and the remaining oil. Cover the dish with cling film and pierce it a few times. Microwave on High for 4-5 mins, until the fish looks opaque and flakes easily.

  • step 2

Remove the fish from the dish. Stir together beans and chorizo and spoon onto plates. Top the beans with the fish and scatter with remaining parsley.

Great dish! I also didn't do it in the microwave, instead doing the chorizo and some shallots in a saute pan before adding the butterbeans, parsley and some stock. I then cooked the fish on top of the beans etc and served with crusty bread to mop up all the yummy juices.

You can do this in a deep fry pan or Wok as long as you give the fish a bit longer to cook. Maybe 15-20 mins. I also do the same recipe using chicken fillets and Berlotti beans. This takes 40 mins or so though but is just as yummy
