Slow cooker barbacoa
This slow cooked lamb dish from Mexico is great for family meals. Our easy recipe has a touch of dark chocolate and ancho chillies for smoky heat
Season the turkey all over and put in the slow cooker with all the remaining ingredients, along with 1 litre of water. Set your slow cooker to low and cook for 3-4 hrs until no pink meat remains, or a meat thermometer reads 75C at the thickest part of the breast.
Remove the turkey from the slow cooker and serve, or cover with foil and leave to rest while you make gravy using the stock that remains (see tip, below). Serve the turkey with the gravy, roast potatoes, carrots and greens.
