  • 50ml seaweed gin
    (Isle of Harris or Dà Mhìle)
  • 1 tsp tonic syrup
    (or 100ml light tonic water and leave out the soda water)
  • 100ml soda water

Method

  • step 1

    Load a glass with ice and tuck in a slice of lemon and a spear of samphire. Pour in 50ml seaweed gin. If you can get it, add 1 tsp tonic syrup and 100ml soda water. If you can’t, use 100ml light tonic. Stir gently before serving.
