  • step 1

    Cook the pasta following pack instructions. Fry the salmon for 4-6 mins with the tomatoes in their oil. Flake the fish in the pan, then add the drained pasta and the spinach. Stir for 1-2 mins until the spinach is wilted and everything is coated.

Looked great but I was a bit underwhelmed with this, the other half enjoyed it but I found the salmon just went into lots of pieces.

tip

A tasty, quick dish. I only use a little oil, add a butter, lemon and caper sauce and add the tomatoes near the end, to prevent them burning.

I agree with Dave6376 about the sun-dried tomatoes. To add umph I added chili flakes, salt, pepper, oregano, basil and parsley. Mixed it all with some pasta water resulting in a bit of sauce with the dish

Very good, quick and easy recipe. I add some anchovies with the tomatoes for a rich flavour.

I love this recipe but it is very high in calories. Probably the sun dried tomatoes oil. I’d substitute those
