Method

  • step 1

    Beat eggs and lemon juice together and set aside. Heat 1 tbsp of the oil in a frying pan. Add broccoli and stir-fry for 2 mins. Add prawns, chilli and garlic and cook until the broccoli is just done. Tip everything out onto a plate and give the pan a wipe.

  • step 2

    Heat a drop more oil in the pan. Pour in half the egg mix and swirl it around to make a thin omelette. Flip over to cook the other side, then lift onto a serving plate and keep warm. Quickly make another omelette. Add half the prawn mix to each, roll up and serve drizzled with some oyster sauce, if you like.

Please do not try this recipe. It will be a complete disaster. I have never tasted anything so appalling. The lemon juice will not allow the omelette to rise. It will not allow you to flip it. It will break up to a very poor version of scrambled eggs. The broccoli will not cook in the time…

Had this for lunch today. Very good and quick. Didn't have oyster sauce but used fish sauce, which worked a treat. Lemon flavour was lovely in the omelette.

Very nice, lovely flavours and very quick to make. Used dried chilli flakes instead of fresh chilli as I didn't have latter, but worked very well. Useful standby recipe for when I need to rustle up supper in a hurry.
