Method

  • step 1

    Boil potatoes in salted water for 10-15 mins until tender. While the potatoes are cooking, mix together the remaining ingredients to make the dressing. Drain the potatoes and while still hot, mix together with the dressing.

  • step 2

    Tip into a secure container to take with you.

Made this to take round on Boxing Day, and really wished I hadn't deviated from a more traditional potato salad recipe. I felt there was too much onion to potato, leaving a harsh taste, the sweetness didn't come through. I suspect this might be down to the natural sweetness (or not) in the onions?…

As I can't stand mayo, it's great to find a really tasty potato salad recipe that doesn't need it. This will become a summer/party favourite for sure!

Made this for a picnic today. Only modified slightly - used barely any oil at all and warmed all the dressing ingredients in a pan before pouring over potatoes. I also used one large red onion instead of small and red wine vinegar instead of cider.

This was so easy, and very very tasty- just as nice cold the next day! Went down a treat with dinner guests! I heated the dressing in microwave first so sugar started to dissolve then poured over onions and left on a low temp for about 30 mins before serving- otherwise sugar didn't really do…
