Method

  • step 1

    Put the noodles in a bowl, cover with boiling water and set aside to soften. Heat the grill to medium and place a piece of foil on the grill rack. Mix 1 tsp of the miso with the vinegar, paprika and 1 tbsp water. Spread over the salmon and grill for 6-8 mins until flaky and cooked.

  • step 2

    Heat the oil in a wok and stir-fry the ginger, pepper and leeks over a high heat for a few mins until softened. Add the garlic and cook for 1 min more. Drain the noodles, reserve 2 tbsp water and mix with the remaining miso.

  • step 3

    Add the drained noodles, miso liquid and spinach to the wok and toss over the heat until the spinach wilts. Pile onto plates, top with the salmon and any juices and serve.

Double up on the paprika, miso, balsamic and ginger and add a little fresh chopped chilli and some coriander. You also need soy sauce for the noodles to give them some flavour.

The noodles definitely could use a bit more sauce. I added a splash of soy sauce, as well. Perhaps fish sauce would have given it more oomph. One leek would have been enough. Suggestion to broil the salmon to brown the miso for a prettier presentation. Quite nice, though, overall.

Very bland and the quantity of leeks is way too much, and not enough sauce. Lacks heat too, but I appreciate not everyone likes chilli.

The salmon is tasty with the miso mixture on it but the noodles are quite bland- as others have said you only need one leek and I’d recommend frying the garlic and ginger first then adding the veg, I also added some chilli and soy sauce but needed something more to avoid it being too bland.

Love this recipe. I only used 1 leek as per the comments and it was plenty. The miso and smoked paprika really elevate the salmon.
