Method

  • step 1

    Heat the oven to 180C/160C fan/gas 4 and line two baking sheets with baking parchment. Beat the butter and sugar until very light and fluffy, then beat in the egg and vanilla. Stir in the mincemeat until combined, then the flour, bicarb, cinnamon, chocolate and ¼ tsp salt.

  • step 2

    Scoop tablespoons of the mixture onto the sheets, leaving space between each for spreading. Bake for 10-12 mins, or until firm at the edges but soft in the middle – they will firm up a little as they cool. Leave to cool on the sheets slightly before eating warm, or transfer to a wire rack and leave to cool completely.

As others have said the cooking time seems a bit short. I gave them 5 mins extra, then thought they would be fine once they cooled. They were still very soft. By this time the oven had cooled so I did batches in the air fryer (180 deg, 4 mins). Now they are just right - crisp edges, softer in the…

I put tbsps of mixture on the baking trays as per the method but they spread all over the tray and onto the oven floor. I'll try them again sometime but will only use a teaspoon of mixture per cookie.

Do you have to use golden caster sugar or would normal white caster sugar be fine??? I just have a lot of normal caster sugar and don’t really want to buy more sugar if I don’t have to, but I obviously will if it’s a must. Please and thank you for your response in advance!!!

Should I only be making twelve cookies as twelve are very large and take longer to cook and they do end up more like cakes than cookies?

Hi, thanks for your comment. We made 12 cookies from our batch but it's absolutely fine to make smaller ones if you prefer, even mini bitesized cookies would work. Just reduce the cooking time slightly as needed. We hope this helps. Best wishes, BBC Good Food Team.
